Sticky Fingerz Grubbery!

So I realized that as an extremely busy DJ, Mom, Graphic Artist and Small business owner; there is no time for long prep times for lunch. So, here's the big deal. I'm trying not to be a sandwich girl (bread, pasta is my kryptonite...they're so darn good...smh). I'm thinking that if I can find quick food prep that is healthy and yummers, I'm winning! I am a huge sharer of good eats and quick remedies to the simplest adulting issues. Therefore, let's make this short and sweet like a Soca intro!


Today is Wednesday (aka Hump Day) and I'm already dragging so I cooked a quick pick-me-up that you can do too!





I call it My Swimmaz Shrimp Soup.. aka Shrimp Soup

Prep Time 15 minutes. Cook Time 15 minutes. Grubbery: Slow Sip!


Servings: 2 Grubberz

Ingredients:

1/3 lb Shrimp (washed,shell-on or off,deveined)

2 Carrots (chopped)

3 Golden Potatoes (cubed, skin off or on your choice)

Red Onions (your quantity choice of stinky goodness)

1/4 Red Bell pepper (chopped)

1/16 scotch bonnet or jalapeño pepper, chopped (notice the quantity lol..these are spicy)

1 ear of fresh corn on the Cob (chopped in pieces)

1 pack Jamaican Fish Tea mix

1/2 pack Coconut Milk Powder Mix

1 Tbsp Goya Cilantro Base Sauce (or you can try my natural green seasoning base-inquire in comments)

1 tsp garlic (minced)

Badia Course Sea Salt (to taste)

Badia Black Pepper (to taste)

Pimento balls (3 the most)

Thyme (1 sprig)

2 cups Water


Cook:

(Note: WASH YOUR VEGGIES and Seafood before cooking Please!)

Part 1:

Boil Water in Medium Saucepan. Add Corn, Potatoes, Carrots- then stir. Add chopped onions, bell peppers, pimento balls to pot. Stir.

Add Cilantro Base and stir. Add Jamaican Fish Tea and Stir very well. Add scotch bonnet or jalapeño and stir. Allow pot to boil for 5 minutes.


Part 2:

In the meantime, prep your coconut milk by adding 1 cup of water to the coconut milk base. Stir with a whisk or spoon (make sure no clumps of coconut milk powder remain. Season shrimp with Sea Salt, Black Pepper and Garlic, set aside.


Part 3:

Slowly add coconut milk and stir while pouring. Add Thyme...and now allow Time.

(Lol you see what I did there...Giggles! I know that was corny but so is this soup...haha!)

Give the pot one good stir, reduce to Medium Low Heat and cover the pot. Set your phone timer for 10 minutes.


Part 4:

Add shrimp and stir. Let boil for 5 minutes.


Part 5:

Check to see if your potatoes are nice and soft, your shrimp are nice and pink. Also, do a taste test to make sure the flavor is hitting! If all is well... Add a side salad and maybe some Jamaican Hard Dough Bread.
